A Road Scholar program by Bruce Kraig

The United States is a land of immigrants. All immigrants bring their cultures with them, not the least being the central element, food. The traditional view of assimilation, or the "melting pot," has been challenged by multiculturalism, or "cultural stew" model. This program examines these two propositions in the light of food history. Ideas such as authenticity, how food preferences change, what taste actually is, and is there an "American Cuisine," among other topics make the program an interesting way to illuminate who Americans are now and in the past.
